DUTIES AND RESPONSIBILITIES OF A COMMI 1

• Follow the kitchen opening and closing procedures.
• Follow the receiving and delivery procedures of goods and

vegetables.
• Provide food of high standards by following the SOPs

established.
• Maintain stock levels(mise-en-place) of all food items at

all times.
• Prepare and cook food according to recipes and follow

portion control guidance for all dishes.
• Follow spoken and written instructions about the plan of

the day.
• Minimise food wastage by ensuring the correct stock

rotation (FIFO), labelling and dating of all food items.
• Fill the main kitchen forms, (wastage, temperature

records, breakage, transfers.)
• Follow the HACCP Principles and maintain a clean as you go

policy.
• Operate the kitchen equipment safely and report any damage

or irregularities.
